Cucumbers

Long, slender, green and juicy, that’s how we know cucumbers from the supermarket. However, this member of the pumpkin family from India is more diverse than we might think. Their surprising variety includes colors from yellow, brown to white and shapes varying from cylindrical, wedge-shaped, club-shaped and spherical. By the way, the cucumbers we usually eat are immature.

    The cucumbers are long, ribbed and slightly prickly. Harvested young, the cucumbers are almost seedless and very crisp. The taste is very good, slightly sweetish and not bitter.
